Crunchy Corn Masa Ice Cream Bar

Desserts never quite caught in at the original Al Pastor. To be honest I don't recall ever ordering a dessert in a bar so I can't really be mad about it. Regardless since the success of the dessert program at Empellón it's something we have decided is important to all of our stores, even if it's just a couple of things. This is a Klondike rip off. It started by studying an old industrial ice cream manufacturing text book and discovering corn starch was often used as a stabilizer in oldey timey days. We took this as inspiration to stabilize some ice cream with our corn masa which when you think about it is corn starch with character. We form the ice cream into bars and enrobe it in chocolate. In place of crunchy rice crispy bits we used crushed tortilla chips.
