Empellón Taqueria (West Village) Pig’s Head Tacos
Don’t be intimidated by the idea of pig’s head tacos. They don’t bite.
The meat is braised, then picked off of the skull and shredded. Later, after being chilled, it is breaded and deep fried to resemble a croqueta. That breading reminds us of a Cemita Milanesa, so to approximate that experience without going full sandwich we apply papalo mayonaissance, pickled black lentils, shredded quesillo, and chipotle chiles.
