Beef shortribs spend time in a galbi-inspired marinade, then sliced and grilled. A mouthwatering portion of the meat goes on a housemade corn tortilla with salsa roja and a green chile kimchi made with Caraflex cabbages, ginger, onions, garlic, and the Mexican herb gochujang.
