Chicharrón prensado is something special for all you pork lovers out here. To prepare this dish, we take pork belly with the skin on and fry it in lard. Next, it is then pressed into a loaf before being sliced and griddled. The results are simmered in a salsa comprised of guajillo chiles and roasted tomato. The tacos are finished with a green tomato pico de gallo, adding a brightness to this porcine pleasure.
